About Aspergillus

Aspergillus is a highly aerobic fungi, growing particularly well in environments that are either high in sugar concentrations or salt concentration. Aspergillus is also capable of growing in environments that are depleted of nutrients.

Aspergillus niger in particular produces citric acid and accounts for the vast majority of citric acid production in the world.

Aspergillus niger also produces helpful enzymes such as: glucose oxidase, lysozyme, and lactase.
